Forage: Thistle
It is possible to harvest bull thistle for food. The center of the bud can be fried and tastes a bit like artichoke heart. I have not done it myself. Seems like a lot of work for not much return.
I love the visual qualities of this thistle. The spiral pattern of the spines on the bud and the irregular shapes of the leaves interest me. The leaves remind me of comic books from the 1970’s: “Bam!” “Pow!”
